EXCELSIOR SPRINGS – A new area restaurant hopes to open this week. Troy’s Grill and Bar is coming to 101 W. Broadway in downtown Excelsior, across the street from The Atlas Saloon. THE OWNERS Audrey Denton and Bob Lyman co-own Troy’s. When asked where the business’ name came from, Lyman responded: “Troy is an old buddy of mine. I met him a long time ago. And he owns a couple other restaurants – one in Iowa and one in Illinois.” AREA TIES Both Denton and Lyman are from the area. “I’m originally from California,” Denton said. “My husband and I moved out here almost three years ago. But now, we are local from Excelsior.” Lyman grew up in Ex-celsior Springs. He lives in Cameron. Lyman has always worked in the food industry, whether in processing or cooking, he said. Lyman loves to cook and looks forward to opening Troy’s, he said.
